This sandwich is quick, easy and vegetarian, while providing a good source of protein! A great tip would be to spread hummus on your bread and add lettuce for extra crunch.
Ingredients:
-1 15oz can of chickpeas
-1 tablespoon finely chopped red onion
-1 tablespoon fresh parsley
-Zest and juice from ½ lemon
-Pinch of salt & pepper
-1 glug of olive oil
